Detroit-style pizza is a specific style of pizza originally developed back in 1946 in Detroit, Michigan. Essentially, it's a rectangular pizza that has a thick, chewy crust and layered toppings, bearing similarities to Chicago deep dish pizza. What makes Detroit-style pizza different from Chicago and New York styles is the crust, which is extra thick and very crispy on the bottom, and the composition of toppings, which are layered on top in reverse order with the sauce on top.

This style of pizza is baked in rectangular steel trays, originally designed for use as automotive drip pans or to hold small industrial parts in factories. At Graffiti, we twice-bake the crust of all our pizzas in a well-oiled pan to a chewy medium-well-done state, which gives the bottom and edges of the crust a fried or crunchy texture. While traditional Detroit-style pizzas use classic toppings like pepperoni, mushrooms, and tomato sauce, we like to get creative with ours by combining different mixtures of ingredients to make some of the most mouthwatering pizzas you'll ever taste. Come on by and find out for yourself!

All of our ingredients are locally sourced and are never frozen — we pride ourselves in using the very best and freshest ingredients from Canadian farmers and suppliers, many of which are located right here in Waterloo Region.

Some of our suppliers include Eby Manor Farms, McIntosh Farms, Fore Quarter Butcher Shop, Ontario Pork, Southern Pride Poultry, Flanagan Food Service, Caudle's Catch Seafood, Local Dairy, Hewitt's Dairy, Mountain Oak Cheese, and Foraged Farmed Fresh.

Experiences

Our Kodisoft Digital Smart Tables are the first of their kind in North America. As large-format touchscreens that take up the entire tabletop, our Smart Tables offer a ton of features and activities that are sure to make your visit a memorable one.

You can play a game of digital air hockey, doodle on a colouring page, or make a puzzle while you wait for your food to come. There's a live feed camera to watch the kitchen or brewery in real-time, as well as the ability to view and share photos with your friends and family. And that's just the beginning!

Our interactive tables are suitable for up for 4 people. With something for everyone, they're a great way to experience your time at Graffiti. Come on in and see for yourself!

We're fortunate to live in a community that is filled with incredibly talented artists, and we love building partnerships that showcase their work.

Since we opened back in 2018 we've had an ongoing partnership with The Firm Murals, whose graffiti artwork you can see all over the walls, furniture and decor of our restaurant, as well as the entire surface of our Mixtape Food Truck. The guys at The Firm have created tons of custom pieces for us, and our space is far more vibrant thanks to them.

If you've visited us before, you'll also have noticed the mural artwork on the inside walls of the Catalyst137 building which leads into our restaurant. All of this artwork was created by another local muralist, Stephanie Scott, whose work can also be found all over Waterloo Region. Fun fact, Steph also designed our original "G" logo!

We also contract local graphic designers to create t-shirts and other Graffiti Market branded merchandise which we sell in our market. We released the Make Your Mark Collection of artist tees in 2019, tapping into the talents of local designers Jonathon Kutt, Jon Johnson, Stephanie Scott, and Joschka Sawatzky to create a series of 4 shirts that celebrate the concept of community. You can find more details about the collection here, and all shirts are available for purchase at our market.

Art is a big part of what we celebrate here at Graffiti, and we're always happy to connect and collaborate with new people. Got an idea in mind? Reach out to us anytime at [email protected].

Our mindset at Graffiti Market has always been to showcase and celebrate our inspirations through our food and space. Music plays a big part in what we're all about at Graffiti, and it’s no secret that Hip Hop music is among the foundation of our inspiration.

Originally established by African-American, Latino-American, and Caribbean-American communities of The Bronx, New York in the 1970s, this cultural movement was created as a form of personal and artistic expression, with lyrical content that echoed the struggles faced by the marginalized and the oppressed.

In the decades that followed, New York’s flourishing Hip Hop scene grew to new communities, countries, and continents, merging with local styles and inspiring millions of people around the world to create new interpretations and forms of music and art.

We grew up on Hip Hop, but we're also hugely into all types of music, especially when it's from the 80s and 90s. We play a variety of music in our space throughout the day, all of which is hand-selected by our Culinary Director and resident DJ, Brian McCourt. For a closer look at the music that his inspired the names of our menu dishes, check out our official Graffiti Market Spotify playlist right here!
